Does anyone know a good resource for the inflammatory index of foods? I see a lot of conflicting information online.

Also- do oats contain gluten? The Sally Fallon book says yes but many sources online say no??

    thanks

They do contain gluten however some claim that oats that are grown and processed seperately from any other gluten containing grains MAY be safe for gluten intollerant people.

If you stick to Sally’s book you don’t need to try to figure out an inflammatory index of foods. Her book points out that eating real food is really quite basic once you understand what traditional foods are and how to prepare them. Indexes and food pyramids are not based on good and truthful science.

That might be for the Anti Inflammatory Diet that some people use who have arithtis and fibromyalgia and other diseases that are thought to be related to inflammation somewhere in the body. The pyramid combines an educational graphic featuring categories of anti-inflammatory foods, beverages and spices with information on specific food choices and serving frequencies.
